Nativ´s Amazonian Pintado Fillets (Brazilian Style)

Amazonian Pintado Fillet Portion

Makes: 4 servings
Cook time: 30 minutes
Ingredients for Fish
  • 4 Pintado loin steaks
  • 4 Tbs. olive oil
  • 4 Tbs. canola oil
  • 4 peeled garlic cloves
  • 1 tsp. black pepper
  • Salt - to taste
Ingredients for Vegetables
  • 2 potatoes - sliced, peeled and cooked
  • 2 cups pearl onions
  • 1 Tbs. finely diced green pepper
  • 2 cups cherry tomatoes
  • 1 tsp. oregano - fresh

    Preheat oven to 200ºC. Spread oil in a baking pan. Add onions, tomatoes and garlic. Sprinkle with green peppers and oregano. Place the fish fillets over mixture and drizzle olive oil over the fillets. Season with salt and black pepper. Bake fish fillets for 20 minutes or until golden brown.


    Arrange fish fillets, onions, potatoes and cherry tomatoes on serving plate.
