Tambaqui with Guacamole

Individual Tambaqui Ribs

Serving: 4 to 6 portions
Preparation Time: 15 minutes
Ingredients for the Tambaqui ribs
  • 1 package of Individual Tambaqui Ribs Nativ (420 g)
  • 2 teaspoons of lime juice
  • 1 tablespoon of salt
  • black pepper freshly ground
  • vegetable oil for frying
Ingredients for the guacamole
  • 1 medium size avocado (approx. 250 g)
  • 1 small peeled and seeded tomato, diced
  • 1 small onion, minced
  • washed and chopped leaves from 1 bunch of coriander
  • 2 teaspoons of lime juice
  • ½ seeded red pepper (orchid pepper), minced
  • salt

    Season the Tambaqui short ribs with the lime juice, salt, and pepper to taste, and place the unfrozen ribs in the refrigerator for 1 hour. In the mean time prepare the guacamole: mash the avocado pulp with a fork, add the tomato, onion, coriander, lime juice, red pepper, and season with salt. Set aside in the refrigerator until serving time. Remove the Tambaqui short ribs from the seasoning, fry them in very hot oil and lay them over paper towel to absorb the excess of oil. Serve at once, accompanied by the guacamole.
