Fish Hamburguer Plate with Rosemary Potatoes

Breaded Fish Burger

Makes: 4 servings
Cook time: 30 minutes

Ingredients for Potatoes
  • 2 cups potatoes - cooked with peelings and halved
  • 1 Tbs. butter
  • 1 Tbs. olive oil
  • 1 tsp. rosemary leaves
  • 1 tsp. chopped parsley
  • Salt to taste
Ingredients for Peas
  • 2 cups peas
  • 1 Tbs. olive oil
  • 1 tsp. sugar
  • 1 Tbs. butter
  • Salt - to taste
  • 1 tsp. grated lime peel
Ingredients for Tomatoes
  • 2 cups cherry tomatoes - halved
  • 1 tsp. fresh thyme
  • Juice of 1 lime
  • Black pepper - to taste

    Heat butter and olive oil in a non-stick frying pan for 5 minutes. Add rosemary. Fry for 1 minute. Then add potatoes and brown for 7 minutes on each side. Season with salt and parsley. Remove from heat. Cover and set aside.
    Mix olive oil and sugar together in a non-stick saucepan. Heat. Add peas, lower heat and simmer for 10 minutes. Remove from heat and season with grated lime peel.
    Place olive oil, lime juice, thyme, salt and pepper in a bowl. Set aside for 15 minutes. Add tomatoes and mix well. Marinate for 10 minutes.
    Fry fish hamburguers in oil heated to 180°C 15 minutes, or bake for 30 minutes in medium oven.
