Breaded Fillet with Crispy Potatoes and Green Beans with Lime Sauce

Amazonian Pintado Breaded Fillet

Makes: 4 servings
Cook time: 30 minutes
  • 8 Nativ´s breaded fillets
Ingredients for Green Beans
  • 300 g green beans
  • 1 liter boiling water
  • 1 Tbs. butter
  • 1 Tbs. olive oil
  • 1 Tbs. chopped onion
  • 1 Tbs. sugar
  • Juice of lime half
  • Salt - to taste
Ingredients for Potatoes
  • 2 cups diced potatoes
  • 1 Tbs. turmeric
  • 1 Tbs. corn oil
  • 1 Tbs. butter
  • 1 whole, peeled garlic clove
  • ½ tsp. diced Ají pepper
  • Salt - to taste
  • 1 Tbs. chopped parsley

    Scald green beans in boiling water. Warm butter and olive oil in a frying pan and add onion. Fry for 2 minutes. Add green beans and then sugar. Fry for 2 minutes. Next add lime juice, season with salt and remove from heat. Set aside.
    Cook potatoes in a saucepan with water and turmeric until tender to fork. Warm oil and butter in a frying pan. Add garlic clove and Ají pepper. Fry the potatoes for 2 - 3 minutes. Season with salt.
    Remove from heat and add parsley.


    Place a portion of green beans, potatoes and 2 fish fillets on a serving plate. Serve while hot.
